Chicken Cutlet Caesar Salad Sandwiches

Growing up, my absolute favorite salad was always a Caesar salad. To this day, I still greatly enjoy it. I recently came up with the idea of somehow incorporating this delicious salad into a sandwich. The perfect protein for this sandwich? Enter our Italian chicken cutlets recipe. This combination turned out to be a match made in heaven, so much so that I knew that I needed to share this with you.

Homemade dressing

Of course we are going to make our own homemade Caesar dressing! This tasty dressing is simple to make. You will need the following ingredients:

  • Garlic
  • Anchovy fillets
  • Lemon
  • Worcheshire sauce
  • Pecorino romano
  • Olive oil
  • Dijon mustard
  • Salt
  • Pepper

Please note that this is an egg-free recipe. Many Caesar dressing have eggs in it but I found that it is not necessary.

To make the dressing, it’s as simple as adding all of the ingredients into a food processor and blending until the consistency of your choice. Once done, add to a small bowl or container and refrigerate until ready to use.

The chicken cutlets and salad

For the chicken cutlets, I recommend following our Italian Chicken Cutlets recipe. These cutlets are crispy and tasty, making them the perfect protein to use for these sandwiches. For the salad part of the sandwich, you can use whatever type of kale or lettuce that you prefer. I typically like to use dino kale. The only caveat to using kale is to make sure to massage it for a few minutes after you chop it up. This will make the leaves more tender and easier to digest. Once your kale or lettuce is chopped up and ready, add some dressing and croutons and mix well.

Making the sandwich

With the Caesar dressings / salad and chicken cutlets prepared, the only thing that’s left is putting the sandwich together. Using the sandwich bread of your choice, add some salad to the bottom bun, add 1-2 chicken cutlets on top of that, put some more salad on top of the chicken, and add the top bun on top of that. This sandwich is absolutely delicious. Think of a crispy chicken Caesar salad but in sandwich form. After making this for the first time, my immediate thought was “why did it take me so long to make this?” Make this sandwich and you’ll know what I mean.

Chicken Cutlet Caesar Salad Sandwiches

Homemade dressing is added to kale or lettuce to make a tasty salad that is put in-between two sandwich buns, along with our crispy Italian Chicken Cutlets. This sandwich is perfect for any Caesar salad lover. One bite and you'll be thinking "why haven't I made this before?"

Ingredients
  

Caesar Dressing

  • 5 Garlic cloves minced; use less if you prefer it to be less garlicky
  • 4 Anchovy fillets
  • 1 Lemon juiced
  • 2 shakes Worcestershire sauce
  • 1/2 cup Pecorino Romano cheese grated
  • 4 tbsp Olive oil
  • 1 1/2 tbsp Dijon mustard
  • Salt to taste
  • Pepper to taste

Salad

  • Kale or Lettuce washed and chopped
  • Croutons

Sandwich

  • Sandwich bread of your choice

Instructions
 

  • Combine all of the caesar dressing ingredients in a food processor. Blend until smooth. Put into a container and refrigerate until ready to use.
  • Follow our Italian Chicken Cutlets recipe for the chicken cutlets that are used for this sandwich.
  • Add the lettuce or kale to a large bowl. If using kale, make sure to massage it for a few minutes to tenderize the leaves. Add the caesar dressing and crouton. Combine until mixed well.
  • To compile the sandwich: add some caesar salad to the bottom bun, then add 1-2 chicken cutlets on top of the salad, add more caesar salad on top of the chicken, and add the top bun. Enjoy!
