One thing that I find really cool about my Blackstone griddle is it’s ability to get up to temperature so quickly. This makes it perfect for whipping up meals during those busy weekdays. Considering it turns on with push of a button (like any gas grill – I’m a charcoal guy), this gives me much more of an opportunity for some outdoor cooking during the week. With this comes a whole new set of recipes, and today I’m sharing Blackstone honey mustard chicken.

Marinate the chicken

Even though this is a weeknight meal, I still recommend marinating the chicken before cooking it. This is where all of the flavor comes from. Luckily this is an easy marinade that can be done the night before or at least 4 hours ahead of time – remember the longer, the better. For the marinade you will need the following:

I know there might be some ingredients that you were expecting for honey mustard chicken but trust me, this combination makes a delicious flavor profile. Just mix all of the ingredients together, add the chicken, cover, and refrigerate for at least 4 hours and up to overnight.

Cook the chicken

When it’s time to cook, heat your Blackstone over medium to medium-high heat. If you have the time, take the marinade with the chicken in it out of the refrigerator, 1 hour or so before you’re going to cook (to help bring it to room temperature). If you don’t have time, no worries – you can skip this part. Remove the chicken from the marinade and add it to the heated Blackstone. Cook until an internal temperature of 165ºF has been reached, flipping the chicken every 2 minutes or so. If you are using thin sliced chicken breast, they will cook much faster than the thicker chicken breasts. If the chicken is charring too fast, lower the heat until it’s finished cooking.

Once the chicken is off the Blackstone, it’s time to eat. Serve this chicken with the side dishes of your choice. This quick and tasty honey mustard marinade cannot be any easier to put together. Perfect for the weeknight, this recipe is typically a favorite that the entire family will enjoy. Just 5 minutes to put together the marinade (not including the marinating time), and 10 minutes to cook the chicken – you can’t beat that for the weeknight!

Blackstone Honey Mustard Chicken

This Blackstone Honey Mustard Chicken recipe is a perfect way to get some outdoor cooking in during the week. Requiring about 5 minutes to prepare the marinade, the chicken is submerged in it, soaking up the delicious flavor. Cooked in under 10 minutes on the griddle, the chicken will have some nice charring due to the honey caramelizing. Quick, easy, and tasty, this recipe is sure to impress the whole family!

Ingredients
  

  • 2.5 lbs Chicken breast

Marinade Ingredients

  • 1/2 cup Honey
  • 1/2 cup Mustard
  • 5 Garlic cloves minced
  • 1 tbsp Ginger minced
  • 1 tbsp Soy sauce
  • 2 tsp Open Fire BPS Rub

Instructions
 

  • Combine all of the marinade ingredients in a medium to large sized bowl. Add the chicken and mix well. Cover and refrigerate for at least 4 hours or up to overnight.
  • About 1 hour before you are going to cook, remove the chicken and marinade from the refrigerator to begin to bring it to room temperature. It's ok to skip this part if you don't have time.
  • Heat your Blackstone griddle over medium to medium-high heat.
  • Add the chicken and cook until an internal of 165ºF has been reached, flipping every 2 minutes or so. If the chicken is charring too quickly, lower the heat while it finishes cooking.
  • Once done, remove from the heat. Serve immediately with the sides of your choice. Enjoy!
